Private jet menu for Izumo

A short, working selection — not the full carte. This is what the kitchen boards most often for a Izumo departure: classics that travel, plated for cabin altitude, sourced the same morning.

The Altitude Dining kitchenJapan

To start
San'in Sea Bass Carpaccio
Thinly sliced local sea bass dressed with yuzu kosho, shaved radish and a light sesame oil. Served chilled in a sealed galley tray, ready to plate at altitude.
Cold main
Izumo Soba with Dashi Broth
Whole-grain Izumo soba served cold with a separate portion of warm dashi and seasonal garnishes. The broth travels in an insulated flask and is poured tableside.
Hot main
Shimane Clam and Ginger Broth with Steamed Rice
San'in clams simmered with kombu, fresh ginger and sake, finished with thinly sliced spring onion. Galley-ready for reheating; paired with a portion of short-grain steamed rice.
Morning
Tamago and Pickled Plum Rice Box
A structured morning box built around short-grain rice, rolled tamago, umeboshi, seasoned nori and a small portion of miso soup sachet. Suited to early departures from IZO.
Pâtisserie
Matcha and Adzuki Financier
A dense, moist financier using Uji matcha and a thin layer of sweetened adzuki. Individually wrapped, appropriate cabin temperature through the flight.
To finish
Seasonal Fruit Kanten with Yuzu Syrup
Set agar jelly incorporating whatever seasonal fruit is at peak locally — citrus in winter, stone fruit in summer — finished with a cold yuzu syrup. Light, clean and visually considered.

Inflight Catering · Izumo

Private aviation catering at IZO

Izumo sits on the San'in Coast of Shimane Prefecture, a stretch of Japan defined by its seafood culture, ancient shrine traditions and unhurried sense of place. The region's rivers and the Sea of Japan deliver seasonal produce of genuine distinction — from sea bream and clams to locally grown vegetables that reflect each passing month. This is not a catering territory that invites generic menus. Izumo's larder rewards specificity: shellfish landed at nearby fishing ports, soba grown from buckwheat cultivated in the mountain foothills, and the quiet, precise flavours that characterise San'in cuisine. Our sourcing team works with local suppliers to bring that specificity directly to the aircraft.

Regional Catering Menu · Izumo

Izumo inflight catering

Izumo soba holds a reputation across Japan for its earthy depth and textural integrity — it is served in its whole-grain form, unlike the lighter varieties found elsewhere, and travels beautifully in galley-ready sealed formats. Seasonal clam broth, shimane-grown nori preparations and San'in-caught sea bass make natural anchors for both cold and hot inflight menus. For longer missions departing toward Hiroshima, Okayama or beyond, we build menus with progressive structure — lighter cold starters drawing on local vegetables and cured fish, moving through warm proteins suited to reheating at altitude. Kosher requirements are accommodated with a minimum of 24 hours' notice; all other dietary briefs are handled through your single point of contact at no additional complexity.
