Here the cooking draws on Moqueguan wines, coastal fish cured in tiger's milk, and a tradition of slow-braised meats — adobo de cerdo, seco de cordero — that reflect the altitude transitions from sea level into the Western Cordillera. Our team builds menus around these references, translating them into galley-ready formats that hold correctly at cabin altitude without sacrificing the integrity of the dish.
